Apple Purée

One pound (450g) of apples will give about ½ pint of purée.



1lb cooking apples

  • 1lb cooking apples
  • Grated rind and juice of ½ lemon
  • 2 tablespoons sugar




Peel, core and slice the apples into a pan. Add 1 tbsp water, lemon rind and juice, cover the pan and cook gently for about 10 minutes, stirring occasionally to prevent sticking. Add the sugar and beat to a purée with a wooden spoon.
